Longhorn cattle have 1/3 as much backfat as Hereford and Angus cattle. Longhorns marble more without laying down wasteful backfat.

Farm raised beef is usually sold as a 1/4, 1/2 or whole beef. This is the most economical way to purchase beef and Durant Ranch also sells meat by the cut.
